This was so good! It made me want to lick the pan clean when we were cleaning up. I did this a little differently so that the vegetarian child could enjoy it too, but you could really do it all in one dutch oven type pot if you wanted to.
1 package of thin sliced boneless skinless chicken breast
1 lb. green beans washed and trimmed
8 oz. baby bella mushrooms (or any mushrooms)
1 red bell pepper trimmed, seeded and cut in strips
1 large onion diced
1/2 c. of balsamic vinegar
4 cloves of garlic minced
3/4 vegetable broth (you could use chicken broth)
1 8 oz. can tomato sauce
1 tsp. of dried oregeno
3 sprigs of fresh rosemary (or I guess about 1.5 tsp of dried, but the fresh is phenomenal)
Olive Oil
Heat up a fairly deep pan, or dutch oven, when hot add 2 T. of olive oil, swirl to coat. Add onion, oregano and rosemary to the pan and saute until soft and translucent, about 10 minutes.
Put a grill pan on another burner and heat on high. You want this pan to be screaming hot. salt and pepper one side of the chicken breasts, when the pan is hot put the chicken seasoned side down and salt and pepper the other side.
Add the peppers and mushrooms to the first pan and cook until all the peppers are tender crisp and the mushrooms done, about another 7 minutes or so. Add the vegetable broth, garlic, balsamic vinegar and tomato sauce and stir to blend. Bring it to a boil, lower the heat to med-low, cover and let cook 15 minutes or until you’re ready to plate. If things are taking longer, set the heat to low after 15 minutes so the sauce doesn’t burn off too much.
While that’s cooking, put the string beans in a microwave safe dish with 2 T. of water, cover and set the microwave on high for 10 minutes.
By this time the chicken should be ready to flip, you’ll know because the cooked protein releases from the pan, making it very easy to turn. Cook on the other side till cooked through and no longer pink.
Assemble chicken and green beans on plate, and cover with sauce.
Serves four with enough left over for Jim to take for lunch tomorrow.
The vegetarian child got hers over a bed of black eyed peas (her protein of choice this evening).
