Oven Roasted Fries

In our ongoing effort to eat a more healthy diet, we find that we really miss french fries.  Don’t you love french fries? I know we do and we can’t bear the thought of never eating them again.  So, what’s a girl to do?  Lighten them up, that’s what.  Here are two attempts.  They were terrific and completely enjoyable, but not exactly perfect.  We’re getting closer, but you could totally nom on these and be happy.

Recipe #1
4 Idaho Potatoes sliced into wedges (8 per potato)
Pam cooking spray (I used olive oil flavored)
1 t. chili powder
1 t. cayenne pepper
1 t. paprika
salt and pepper to taste.

Preheat oven to 400 degrees.  Slice potatoes and place on a sheet pan that you’ve sprayed with Pam.  Spray the potatoes with pam, sprinkle the spices, salt and pepper.  Place in oven.

Start checking fries after 30 minutes. Remove when they’ve reached desired crispness.

They were pretty spicy and cold ketchup perfectly balanced them.

Recipe #2

1 t. dried rosemary
1 t. dried oregano
1 t. dried parsley
1 t. garlic powder
salt and pepper

Preheat oven to 400 degrees.  Slice potatoes and place on a sheet pan that you’ve sprayed with Pam.  Spray the potatoes with pam, sprinkle the spices, salt and pepper. Place in oven.

Bake for 30 minutes, remove from oven, using a spatula, carefully turn over fries, sprinkle more salt and pepper.  Place back in oven and check every 5 minutes until they’ve reached desired crispness.

These were both yummy, but they’re not exactly perfect.  I’ll keep tweaking the recipes till we have the perfect oven roasted fries. In the meantime, I have no problem munching on these!
