Baked Chicken Tenders and Green Beans with Tomatoes

My children lament the fact that I won’t let them have fast food so often that I’ve come up with a couple of ways to stave off the fast food cravings for them.  One way is baked chicken tenderloins, breaded with either panko or italian style bread crumbs and sometimes we even make the bread crumbs ourselves.  This time I had panko that I wanted to use up, so that’s what we did… mostly.

2 lb. chicken tenderloins, or thin sliced chicken breasts (cutlets)
5 eggs
2 T. Milk/water/half and half/cream
bread crumbs (a big bowl full)
2 lbs. green beans
5 cloves of garlic chopped
2 pints of grape tomatoes
olive oil

Preheat oven to 400 degrees.
Clean and trim the green beans and tomatoes, drain.  On a large, lipped baking sheet, lined with foil, spread out the beans and tomatoes, sprinkle the garlic over them and then pour a couple of tablespoons of the oil on top.  Toss with clean hands to coat.

Put in the oven and set the time for 30 minutes.

Break the eggs into a large bowl

Add the liquid of your choice (I had half and half) and whisk.  Poke some holes in the chicken with a fork. Add the chicken to the bowl and allow to soak for a couple of minutes.

Set up your assembly line, left to right: egg and chicken mixture, plate of bread crumbs, foil lined baking sheet

Take a piece of chicken from the bowl, dredge in the bread crumbs and place on the sheet.  Continue until you’ve done all the pieces of chicken.  I ran out of Panko and used Italian bread crumbs for the last two pieces.  oops.

When the timer goes off for the green beans, put the chicken on another shelf in the oven and cook the chicken and green beans for another 30 minutes.

Remove from oven and plate.

The children liked the panko better, I liked the Italian better.  Both were delicious.  I’ve said it before, but the green beans really take the place of french fries when they’re cooked this way.  They’re crispy and slightly burned and completely delicious!

    Thanks for this great post- I love your solutions for healthy food for your kids. I especially like the green beans ;-) of course because they’re the healthiest. But I also love your creativity when it comes to the chicken- I often serve my boys similar chicken dishes. Just one other comment – recently, I’ve realized that I have to teach my sons to eat meat off the bone – up until now (they’re 8 and 11) we haven’t really had them eating chicken wings or drumsticks because they wouldn’t do it. But I think when they grow up, if they’re going to learn to enjoy good food, they’ll have to eat off the bone, so I’m trying to train them…. It all starts with incentives – I give them something I know they like, and I tell them that it’s going to be really good, but I give it to them in a shape or presentation that they aren’t familiar with, like ribs, or chops with a big piece of bone. Mind you, only once a week, but I hope it’s enough to make an impression.

  3. Green beans and tomatoes are not really my thing but I happen to like it when you mix it with other yummy stuff that compliments it :)
