Last week we had Mahi Mahi from Target and it was such a hit that we decided to have it again this week. I thought it would be nice to make a Hawaiian flavored dish and started to look for some ideas. I came across this, but it was broiled, not grilled and I really wanted to grill the pineapple – so, I switched it up a little.
Here’s what I did:
1 pineapple
1 yellow pepper
1 orange pepper
1 jalapeno pepper ribs and seeds removed, chopped fine
3 T EVOO
2 limes divided
2 Tablespoons chopped fresh cilantro
kosher salt and white pepper to taste
1 head of romaine lettuce
Trim and Slice the pineapple, clean the seeds and ribs out of the orange and yellow peppers.
Heat a grill pan to med/high heat. When it’s hot, add the pineapple slices and grill until you have nice brown marks. Turn and grill on the other side. remove to a plate.
Add the peppers and grill till they have nice grill marks too.
Remove and add to the plate with the pineapple. Chop the pineapple and peppers and add to a large bowl, pour the juice from the pineapple that’s on the plate into the bowl. Add the jalapeno, 2 T of the olive oil, the juice of one lime, and cilantro. Salt and pepper to taste, toss and set aside.
In a ramekin or small dish, pour 1 T olive oil and the juice of one lime. Using a pastry brush, brush the mixture onto one side of the fish, sprinkle with white pepper. Heat the grill pan back up place the oiled side of the fish down, oil and pepper the other side. After 7-8 minutes, turn the fish. Cook till flaky and cooked through. You can flip it again if you need to.
Put some chopped lettuce in a bowl, place the fish on the lettuce and spoon the salsa on top. Drizzle some of the juice over the whole dish. Sweet, spicy, refreshing and delicious.
