Spicy Chorizo, Saffron Rice and Beans

1 16 oz. package Saffron Rice – I love Mahatma Brand
2 Tablespoons of butter
5 1/3 cups of water
1 14.5 oz. can tomatoes
1 4 oz. can green chiles
1 15 oz. can black beans
5 cloves garlic chopped
*1 pepper + a little bit of sauce from a can of Chipotles in Adobo chopped
olive oil
1 package of dried chorizo

Heat a large heavy bottomed pot with a lid on med/high heat.  Add a couple of tablespoons of oil to the pan, then add the garlic. Saute for a minute or two until it starts to smell delicious.

Add the water and butter, bring to a boil.  Stir in the rice, lower heat, cover and simmer for 20 minutes. No peeking!  the secret to perfect rice every time is to never remove the lid until the specified time is up.

Drain and rinse the can of black beans.

Chop the chorizo and chipotle.  Open the cans of tomato and green chiles.

When the rice is done, add all the other ingredients and carefully toss to combine.  Make sure you combine it really well as those chipotles are super hot and you don’t want to get a mouthful of them.

This is really spicy – if you’d like a milder dish omit the chipotle.  You could also use a milder sausage, or even chicken if you’d like.

Roast Chicken and Broccoli with Peppers and Goat Cheese

Chicken and broccoli is always a popular dinner.  The ingredients are easy to get, relatively inexpensive, and easy to prepare, but sometimes you need to dress it up just a little.  This does the trick.

4 chicken breasts bone in, skin on
4 generous pats of butter
salt, pepper, dried rosemary
Olive Oil – just a couple of Tablespoons to cook the veggies
2 heads of broccoli – trimmed
4 cloves of garlic – minced
1 orange pepper – chopped in 1/2 in. pieces
1 yellow pepper – chopped in 1/2 in. pieces
4 oz. goat cheese

Preheat the oven to 400- sprinkle salt, pepper, rosemary on top.  Place a pat of butter on each breast.  This is the secret to brown, crispy, crunchy skin.

Cook for 40 minutes or until the juices run clear.

15 minutes before the chicken is done, heat a pan on med/high heat.  Add olive oil, to the pan and when it’s hot, add the peppers.  Saute for 10 minutes, or until they’re glossy.

add the garlic and saute until you can smell it – just a minute or two.  Add the broccoli and saute a few minutes more.  Add 1/2 cup of water to the pan immediately cover and let it steam for 10 minutes or until the broccoli is tender crisp.

Uncover and allow any excess water to cook off. Remove from heat, crumble the goat cheese into the broccoli mixture and toss lightly.

Put a chicken breast and a pile of broccoli on each plate.

The crisp broccoli, the sweet peppers and tangy goat cheese compliment the moist roasted chicken beautifully.

Serves 4.

I Love Build A Sign

So remember that blog party thing we’ve been talking about so much? Well, not only did I donate prizes, but I won one too! And a pretty terrific one, I might add.

Let me give you a little back story.

I have, forever, talked about getting custom bumper stickers for ColorMePink.  Seriously – if ask my husband he will tell you that I’ve been thinking about it and planning it and talking about it for years.  But I always procrastinated.   So when I saw that one of the prizes at the Ultimate Blog Party was custom bumper stickers from Build A Sign, I immediately listed that as a prize I would love.  And you know what?  I won them!

I immediately created an account and began designing my custom bumper stickers.  I really wanted the design to coincide with the blog, so I created a higher resolution version of the ColorMePink butterfly and uploaded it the Build A Sign’s server.  It could not have been easier and within a couple of minutes I had a design that I thought really worked.  Simple, yet eye catching and I placed the order and then immediately started to check the status of the order.  Do you think I was excited?  Oh yeah.

Well, they arrived well before the expected arrival date and I. Am. Thrilled!  As you can see, I don’t do a lot of stickers… The one on the far left says, “Montauk The End” because I’m from Long Island and Montauk is the Eastern tip of the island and I love it there and it’s a little bit about telling people where I’m from and then in the middle there’s an Apple because, well duh.  And now, there’s a ColorMePink.com bumper sticker!
