Watching The Chew last week, Michael Symon made some lamb kebabs and I could not get them out of my head. I love lamb, but almost never have it and I’ve never cooked it before. I decided that it was high time to remedy that so here’s what I did.
For the Lamb:
- 2 lbs. lamb cut into cubes
- 2 cloves garlic chopped
- 3 Tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- a pinch of red pepper flake
- a tablespoon of ground coriander
- Salt and White Pepper to taste.
- Flat bread
Place a zip plastic bag into a bowl and add all the ingredients.
add the lamb pieces and carefully squeeze the air out and zip the bag. Mush it all around with your hands so that each piece gets coated. Refrigerate for a couple of hours.
For the Tzatziki:
- 16 oz. Greek Yogurt
- 1 hot house cucumber (or the very best cucumber you can find), peeled
- 2 cloves garlic minced super fine
- zest of a lemon
- salt and white pepper to taste
I definitely took some liberty with the tzatziki – and it was delicious
Grate half the cucumber into the yogurt and then finely dice the other half, add the rest of the ingredients and stir well to combine, cover and refrigerate for at least an hour.
For the salad:
- 1 hothouse cucumber, washed
- 1/2 red onion
- 2 tablespoons Balsamic vinegar
- 3 tablespoons extra virgin olive oil
- salt and pepper to taste
If you have it, use a mandoline to slice the cucumber and onion, if you don’t have one, slice as thin as you possibly can. Add the rest of the ingredients and toss to combine. Make this right before you’re going to grill the meat, cover and set aside.
Oil your grill pan (I use spray) and heat it to med/high heat. Skewer about 4 pieces per and cook about 3-4 minutes each side, or until there are deep, dark grill marks on both sides. When they come off the grill put them on a plate and let them sit for a few minutes to rest. Heat the flat bread on the grill for a minute or two.
On a serving plate, put a piece of flat bread. Spread a generous amount of tzatziki onto the bread and top with the cucumber onion salad. With a fork (or your fingers) pull the lamb off the skewers on top of the salad.
This is one of my all time favorite meals. The cool cucumber and the tart yogurt, the bite of the garlic and onion, the rich grilled lamb and the bread… Killer.
Make sure to have lots of napkins and maybe more bread to sop up what you spill. If you’re concerned about what people might think about your messy eating habits, either use a knife and fork or get some new friends. Your choice. =)
