And I’ve been going a little crockpot crazy.Most of the meals have been great, especially this really simple chile chicken.
package of skinless, boneless chicken breast
4 oz can diced green chiles
2 teaspoons chili powder
1/4 teaspoon cayenne powder
1 teaspoon cumin powder
1 teaspoon salt
1 tablespoon olive oil
2 cloves garlic, chopped
1 medium onion, diced
3/4 cup chicken broth
Place all in crockpot, cook on low 8 hours or until the chicken’s tender and cooked through.I’ve served it over saffron rice, couscous, white rice… just about everything, it’s delish! And most of the recipes have been that good. Except for tonight.I saw a recipe for sort of a reuben inspired chicken dish and as I was making it this morning, I had some real reservations.

put it all in the crockpot (this is where I first started to have reservations… Cooking the russian dressing was not seeming at all appetizing and I should have listened to that little chef in my head.. oh yes, I definitely should have listened…Cook on low, yadda yadda…spoon onto plates and sprinkle shredded swiss cheese on top.It was absolutely repulsive.The kids liked it at first and were making sounds like “yum” and “good”, for about 4 bites. Then Haley said, “Mom, my tummy doesn’t like this”. I said, “Yeah, mine isn’t thrilled either”, so we threw it away and had ice cream for dinner. I didn’t put that in the crockpot though.
