I think I’m going to change my menu plan to a Sunday start. It just works out better for my scheduling. I’ll still link up on Mondays, but this just makes more sense for me, k? k. Here goes…

Sunday: Travis’s birthday, restaurant of his choice
Monday: Swiss Chard Pesto with Whole Grain Angel Hair
Tuesday: Open night… either going out or just grabbing sanwiches – Maybe a trip to the new Sweet Tomatoes that just opened.
Wednesday: Mediterranean Tuna Salad Sandwiches with Kohlrabi Slaw and Green Salad  – I’m going to try a more Mediterranean slaw (as always if it works I’ll share it), but here’s one for apple and kohlrabi that’s delicious!
Thursday: Roasted Chicken breast with Asparagus and Mustard Roasted Potatoes
Friday: The Sopitas de Tortilla dish that I’ve tried to make and just not gotten to for the last three weeks.
Saturday: Something with Collard Greens.  I got them this week and I just have no idea what to do with them.  I’ll update when I figure it out.

I am just not feeling the whole home keeping part of my life lately.  I’ve been busy getting some other things done and allergies have been kicking my butt.  However, I’m still going to try to get it together with my meals this week.

Monday – Swiss Chard and Grilled Chicken
Tuesday – Grilled Steak, Mushrooms and Spicy Broccoli
Wednesday – Nontraditional St. Patrick’s Day Celebration – Green foods to be determined
Thursday – Jim’s Day off – St. Patty’s Day and make your own sandwiches
Friday – Homeschool Group Friday – Chicken Salad Veronique Wraps
Saturday – Pan Seared Scallops and Asparagus
Sunday – Our 18th Wedding Anniversary… Somebody better have something special planned.  YouKnowWhatIMean?

Wednesday – Israeli Couscous with Goat Cheese, Spinach and Tomato (sort of like this)

Friday – Tuna Sandwiches with oven fries and coleslaw
Saturday – Hotdogs, baked beans and salad

Menu Plan Monday Feb. 21, 2011

So last week, I missed MPM – but here we are, back on track.  I have been so busy lately, and there was a bit of a readjustment, but I like being busy and once I get over the shock of it and find my stride, I prefer it. Have a great week!

Monday -  Roasted Chicken breast with stir fried tatsoi and cabbage
Tuesday – Flank Steak with roasted beets and sauteed greens, and Romanesco Cauliflower
Wednesday – Linguine Puttanesca and salad
Thursday – Grilled chicken with green beans and fingerling potatoes
Friday – Ensalata Caprese Pasta Salad (an idea I had – I’ll keep you posted) OMG, it was teh yum!
Saturday – Mango Chicken Salad

I’ve also got some Kohlrabi pickles and some Kim Chee cooking up in the fridge.  Recipes to follow (if they turn out well!)

Menu Plan Monday Feb. 7, 2011

Last week I didn’t do a lot of what I said I would. The Clementine Dressing never got made because we had people over and all the kids ate the whole crate of clementines!  I’m really not complaining, I’m glad they enjoyed them – but then we went out to dinner and made soup another night (it didn’t come out so great, so no recipe) Here’s to this week’s hope that I can do more of what I intend.

Monday – Crockpot Roast with vegetables and wine sauce

I am really starting to love doing this publicly! It’s nudging me to take it up a notch, playing with new flavors and ingredients.  If you’re not doing this, you really should think about it.

Monday: Chorizo and Rice (we used andouille instead of chorizo – it was yummy!)
Tuesday: Taco Salad Stuffed Peppers – the idea is a mixture of stuffed peppers and taco salad, recipe to come.
Wednesday: Roasted Mahi Mahi over chunky vegetables
Thursday: Jim’s Day off – I think we’ll do a ham and then make split pea soup, recipe to come.
Friday: Southwest Pasta Salad
Saturday: Grilled Chicken with Persillade potatoes with tossed salad, recipe to come.
Sunday: Jim’s off and his birthday is the 31st, so we’ll probably go out.

Since I started sharing my menu planning it’s been very interesting to see just how often I change it.  Although I’ve been doing this for years, sharing it publicly really holds you accountable and that’s great, because accountability is exactly what I need.  So, here we go – and I’ll try even harder this week to stick to the plan.  If you want to visit last week’s, with recipes, go here.

Monday – Pasta with tomatoes, garlic and oil, tossed salad
Tuesday – Beef in the crock pot
Wednesday -Roasted chicken breast, roasted cauliflower, tossed salad
Thursday – Jim’s day off, I think we’re going to use the gift certificate we have for Grace Sushi
Friday – Tuna Platters
Saturday – Barley Salad, recipe to follow *update* I’m still tweaking this, it wasn’t worthy of a blog post.
Sunday – Jets vs. Steelers We’ll be doing finger food and snacks…. J-E-T-S!  Jets! Jets! Jets!

Menu Plan Monday January 3, 2011

Wow! New year… The holidays are over and I’m actually looking forward to getting back to some normalcy. Well, normal for me, anyway.

So, remember how last week I mentioned that I didn’t know how much of the plan I’d stick to? Turns out I’m prophetic because we stuck to almost none of it. Let’s recap.
MondayTomato Soup with Salad Frozen Pizza
TuesdayMahi with sesame balsamic Tomato Soup
Wednesday – linguini with tomato sauce and salad Sandwiches
Thursday – London Broil and brussels sprouts (I had an idea for the brussels sprouts, if it’s good I’ll post it) Leftovers, salad, fend for yourself.
Friday – Roasted Shrimp Cocktail with Black eyed peas and collard greens, snacks, etc.
Saturday – Tuna Salad Platters Pasta Salad
Sunday – Roasted chicken breast with Saffron rice and peas and salad Salad, sandwiches

Yeah, I suck.

This week, loosely organized:
Monday: Leftover tomato soup and salad
Tuesday: Mahi ceviche w/ slaw based on these recipes, I’ll keep you posted. *Update* Couldn’t get fresh mahi, had Antipasto Pasta Salad instead.
Wednesday: roasted chicken breast with brussels sprouts (same idea – again, I’ll keep you posted) *Update* Delicious!
Thursday: Crockpot Pot Roast
Friday: Homeschool Group Friday, we had pizza and breads and desserts and deserts and snack.  Yum.
Saturday: Free day – I don’t know what we’ll do yet.  We have some gift cards we might use, or we might go to open mic night at Mojo Grill

Menu Plan Monday Dec. 26, 2010

i! If you’re visiting for the first time, welcome!
There’s a great meme called Menu Plan Monday and since I plan my menus weekly anyway, I thought it would be fun to link up with it. If I give someone some inspiration along the way, all the better!

So last week didn’t go exactly as planned.  We wound up having pizza for dinner on Tuesday because we were out Christmas shopping all day and I was exhausted from it, so the Mahi got moved to this week.  DiGiorno pizza was BOGO at Publix, so that’s what we had. Then we were invited to a friend’s house on Christmas Eve, so I didn’t cook then, either.  Also, turkey was on sale, Jim bought one and decided he wanted that for Christmas – unfortunately, he though I took it out of the freezer and I thought he took it out of the freezer and no one had, in fact taken it out of the freezer.  So.  Christmas day we noshed.  To top it off, Jim’s employer gave all the employees a holiday box, with a ham, a turkey and all the trimming (including a 1/4 bushel of the most delicious oranges) – so Boxing Day we had a ham that Jim cooked. Not exactly the week I’d planned, but hey, I’m flexible and it is the holidays… we’ll get back on track in January.

So this week, there are a couple of meals that were supposed to be cooked last week

Monday – Tomato Soup with Salad
Tuesday – Mahi with sesame balsamic
Wednesday – linguini with tomato sauce and salad
Thursday – London Broil and brussels sprouts (I had an idea for the brussels sprouts, if it’s good I’ll post it)
Friday – Roasted Shrimp with Black eyed peas and collard greens and a bottle of Veuve Cliquot that I’ve been saving. I really want some oysters, but I don’t know if that’s going to happen.  We’ll see.
Saturday – Tuna Salad Platters
Sunday – Roasted chicken breast with Saffron rice and peas and salad

Let’s see how much of this I actually stick to… It’s very hard with the holidays and my knee issue.  It’s definitely healing, but it’s taking too long.  Thanks for asking.
