I think I’m going to change my menu plan to a Sunday start. It just works out better for my scheduling. I’ll still link up on Mondays, but this just makes more sense for me, k? k. Here goes…
Sunday: Travis’s birthday, restaurant of his choice
Monday: Swiss Chard Pesto with Whole Grain Angel Hair
Tuesday: Open night… either going out or just grabbing sanwiches – Maybe a trip to the new Sweet Tomatoes that just opened.
Wednesday: Mediterranean Tuna Salad Sandwiches with Kohlrabi Slaw and Green Salad – I’m going to try a more Mediterranean slaw (as always if it works I’ll share it), but here’s one for apple and kohlrabi that’s delicious!
Thursday: Roasted Chicken breast with Asparagus and Mustard Roasted Potatoes
Friday: The Sopitas de Tortilla dish that I’ve tried to make and just not gotten to for the last three weeks.
Saturday: Something with Collard Greens. I got them this week and I just have no idea what to do with them. I’ll update when I figure it out.
